This fresh meat comes from the most valuable part of the pork leg, i.e. the Culatello, trimmed with a portion of pigskin. The fresh Culatta is put in an elastic net that allows the typical “tear shape“, then seasoned with a wisely balanced mix of salt and pepper; finally, it is left to age according to family tradition.
Starting from a weight of 7-8,5 kgs, the Culaccia reaches 5-6 kgs after the minimum aging period of one year. The Culaccia is highly appreciated for its sweetness and for its intense smell. Obtained from the “heart” of the pork leg, this fresh meat by Selezione Srl has excellent organoleptic characteristics. Being boneless, it can be sliced just after seasoning without any waste.
